It's my belief that most farms in France that commercially produce foie gras operate like the one I visited, so I am content to have my foie gras two or three times a year, just as we do suckling pig and white veal. The PP household must be peopled by barbarians, because we boil living crabs, lobsters and mussels and eat oysters alive... The thing with Shellfish is it goes bad almost at the point of death releasing toxins into the meat . Popping a Lobster head first into boiling water is as good as its going to get .

What we do in the trade is put a sharp knife at the base of the head then push it in and cut the head in half. Instant death just before it goes into the pan.

I was always told by my father (I take it his knowledge came from his father a chef at London's finest hotels ) that they must be cooked alive if you want to enjoy the meat at its best. That means boiling them whole . Slicing it up prior to boiling just adds to the death process as lobsters like all invertebrates have nerve clusters throughout the body rather than brains as in vertebrates . Cutting its head in half may shut down one nerve cluster but you still have another 14 to deal with . Or you can put it head first in boiling water and its dead in what 10 seconds ,nobody really knows the most 'humane' way but meat quality is said to be better with direct boiling That aside and I respect the fact you are in the trade do you cut its head in half because you think its a better way or through pressure from outside forces , animal rights ect ?
