The Light newspaper published a letter from someone who claimed that the advice to limit our salt intake is a conspiracy intended to cause us health problems that benefit the medical profession. The letter claimed that we need at least 12 grams of salt a day ... claiming that Japanese fishermen consume this amount and stay perfectly healthy. It is a fact that there are fishermen in Northern Japan who do consume this amount of salt ... and are apparently healthy.
At the other end of the scale there is an Amazonian tribe that only has a salt intake of one tenth of a gram a day ... and they stay healthy.

Japan had the most strokes, this was put down to too much sodium in the diet.

Despite a high salt intake most people's blood (serum) sodium levels are within the normal range. This does not mean that the salt is not causing health problems as it can build up in the body cells and cause fluid retention. This fluid retention can be corrected by drinking more water ... which flushes out the salt and allows the retained fluid to be released. High salt intake combined with a low fluid intake is a common health problem. A casual look at the online advice about how much water we need often gives the impression that a mere liter and a half is all we need ... which is not the case if we have a taste for salty foods! It used to be the case that in most towns there were free public water sources "all over the place" .. almost all of them were turned off during the 1976 prolonged drought. How to keep down obesity ... make available free water outlets (and publicise them on street signs). Keep people out of the cafes and fast food outlets. Limit the number of cafes and sources of takeaway foods to how they used to be (where I was brought up there were just two cafes in a mile long high street).

The real issue is that our knowledge of our physiology is very limited indeed. There may be types of diet and lifestyle in which eating a large amount of salt is healthy and there may be others for which it definitely isn't. The same is true for the various distinctions between various hereditary groups and their different physiology Evolution sorts these combinations out with deep time - ie a high (or low) salt intake diet works with a complex combination of adaptions and environment, which are the ones that are successful. My general advice is to eat something close what your ancestors ate - but that ignores environmental factors like calorie expenditure - ie we don't have the same lifestyle
